For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation
- 1. Preheat oven to 200C, and line a tray with baking paper.
2. Add sugar and peel to the bowl, mill Sp 9 for around 3 seconds. Check, scrape down and repeat if needed till peel is finely chopped. Place into small bowl and set aside.
3. Add dates and apricots, chop Sp 6-7 for 3-5 seconds. Set aside, with sugar mix.
4. Add flour, salt and butter to bowl, Sp 7 for 6 seconds, till it resembles breadcrumbs.
5. Add sugar mix and milk, mix Sp 6 for 5 seconds.
6. Add dried fruit and knead for 30 seconds.
7. Remove from bowl, onto tray, press out to about 3cm thick.
8. Cut out into rounds, using a floured cutter/tin can. Leave only a little space between each for spread.
9. Brush tops with milk and sprinkle top with a little raw sugar.
10. Bake 18-20 min, until golden.

Very tasty, the orange vest comes through and is delicious. When doing again, I might add just a dash more milk. I’m a lover of scones, but don’t add sugar to them, so I didn’t add any sugar, and they were way sweet enough especially with the dried fruit. Thanks for sharing ”shecooksforboys” coz so do I!!
