It’s no surprise my mornings and most evenings when my daughters go to bed begin with a big cup of coffee. It really is the busiest time of year and although I love having the flexibility to work from home mostly on my own schedule, that also means my real work hours are in the night when the rest of my house is sleeping so I can get the most out of the days with my youngest daughter. I’m trying to soak up every minute of this time while she’s still little. At almost three, I can’t believe how quickly these years have already flown by. My frosted sugar cookie pancakes are possibly the best thing I’ve ever baked and could be the reason I show up to a holiday cookie exchange with a plate of pancakes.International Delight® Chocolate Hazelnut Coffee Creamer is a close second and is an ultimate holiday must have in your refrigerator.

TheFrosted Sugar Cookie creamer is incredible in a cup of coffee and has thesweet taste of home in a rich, creamy swirl inspired by cookies & frosting.

I’ve used International Delight® creamers in baking before. Remember myCaramel Macchiato Brownies? YUM! But this season there are new varieties that are providing even more inspiration for holiday baking like these peanut butter chocolate cheesecake bites. Yes, please.

You can find a big variety of seasonal International Delight® creamers at your local Walmart in the refrigerated dairy section.

Let’s talk about these Frosted Sugar Cookie Pancakes that might remind you of a certain favorite holiday movie. I’ll admit, they do look like they’re loaded in sugar but don’t let those sprinkles fool you. These would make an excellent breakfast for the day your holiday Elf arrives or just a fun morning treat when you have out of town visitors.

Ingredients:

  • 1 1/2 C flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 C sugar
  • 1/2 C butter
  • 1 egg
  • 1 tsp vanilla
  • 1 CInternational Delight®Frosted Sugar Cookie Coffee Creamer
  • 1 tsp vegetable oil
  • toppings: powdered sugar, whipped topping, sprinkles

In large bowl, mix flour, baking powder and salt and set aside.

In bowl mix sugar, melted butter and egg. Add vanilla and creamer and stir until combined.

Add dry ingredients to creamer mixture and stir until well mixed.

Lightly oil hot griddle and drop pancake mixture onto middle. Cook each side until light brown carefully flipping between cooking each side.

Stack cooked pancakes on plate. Sprinkle with powdered sugar and top with whipped topping and sprinkles. If traditional pancakes are desired, these are also yummy with butter and maple syrup.

Enjoy with your warm coffee or if you’ve already had a cup (or two, or three), pour yourself a big cup of milk and enjoy your frosted sugar cookie…PANCAKE!

  13. These remind me of my favorite brunch place in Chicago, The Bongo Room. They always make these insanely creative pancakes, just like these. Since I don’t live in Chicago anymore I haven’t found any place to replace, but now I can make my own Bongo Room worthy pancakes at home.

  14. Great recipe for Thanksgiving breakfast for the little ones. We are hosting this year, and 8 kids will be arriving Wednesday night. Great idea for that big breakfast needed to hold them over until dinner.

    • Our batter was thicker too but it helped them stay big and fluffy instead of flat while cooking.
