I love the amazing wonders and versatility of SOUP! And my Pumpkin Beauty Soup Recipe is just another way to work on being mindful, as we eat one spoonful at a time.

Soup is an amazing food that is energizing, great for weight loss and easy to digest. I’m a huge soup fan, and I wanted to offer you another great recipe to have in your soup repertoire, that is perfect for this season!

Now, let’s talk about our ingredients today…

Beauty Food : Pumpkin

Pumpkin contains antioxidants vitamin A and C—that will help to soften and soothe the skin and boost collagen production—keeping your skin fresh and looking your best.

Pumpkin really is a solid source of essential nutrients and should be added to our beauty foods rotation. And remember, if you’re in a bind and unable to prepare fresh pumpkin, organic pumpkin puree in cartons is an option (versus aluminum cans!).

In the Beauty Detox Solution, I emphasize consuming more whole plant foods, that are nutrient-dense and alkalizing, and pumpkin is a great one to rotate in!

When should soup be eaten?

Since soup has a lot of liquid, I recommend having it first for best digestion.

To sum it up, consuming liquids and water with your meals dilutes the hydrochloric acid in ours stomach (and other digestive juices), which means that our food doesn’t digest as easily. We want to enhance digestion for increased energy, less bloating and all around better nutrient assimilation!

So do your best when implementing these new health tips into your daily lives, and remember, “Progress, not perfection”.

My Definition of Beauty

If there is one thing you take away from this, it’s that I’m redefining beauty to be an empowering, attainable concept for all women and people.

Beauty is not about the typical shallow concept that is often circulated. If you’ve had the chance to look into my Radical Beauty book, you will have noticed that it has nothing to do with trendy makeup, fads, insecurities, or comparing ourselves with other women.

Prepare ingredients.

Heat olive oil in a large pot over medium heat and add onion and garlic (best to never heat olive oil too high!). Cook for about 3-5 minutes, until onions become translucent and garlic just become fragrant but not burnt.

Add the pureed pumpkin.

Add the coconut milk.

Add the vegetable stock.

Add the cinnamon, nutmeg, and cloves.

Add the sea salt.

Bring to a boil, then quickly turn the heat to low and simmer for about 20 minutes, until the soup has reduced and thickened slightly. Next, puree until very smooth.

Pumpkin Beauty Soup Recipe

Ingredients

  • 1 Tablespoon coconut oil
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 4 cups 100% pumpkin puree or fresh pumpkin
  • 2 cups low sodium vegetable stock
  • 4 cups coconut milk
  • ½ teaspoon cinnamon
  • teaspoon ground nutmeg
  • teaspoon cloves
  • 1 teaspoon sea salt

Instructions

  • Heat olive oil in a large pot over medium-high heat and add onion and garlic. Cook for about 3-5 minutes, until onions become translucent and garlic just become fragrant but not burnt.

  • Carefully stir in the remaining ingredients.

  • Bring to a boil, then turn the heat to low and simmer for about 20 minutes, until the soup has reduced and thickened slightly.

  • Puree until very smooth.

  • Enjoy!

    In the blog and that instruction you say to use olive oil but in the ingredients list it calls for coconut oil. I know you typically say not to use olive oil so I think it’s probably just a typo for you guys. Just wanted to let you know :-)

    Hi Kimberly,

    I have been follow you for almost three years and I am wondering is it possible to cook olive oil in medium high heat? Olive oil is not the oil for high heated and your recipe require heat for 3 to 5 mins. I look forward to hearing from you. Thank you!

      Hi Amy….while I do use a bit of olive oil in my recipes, this one does have coconut oil (the typo was corrected in the directions).       Hi CI, and thanks for your great question. Yes, coconut milk does tend to curdle when it hits the heat, and this is because the protein changes its shape and ability to react with water and/or oil.
