Ingredients and Supplies:

  • 1 16-ounce jar of chili verde salsa
  • 1 bag of tortilla chips
  • 1 can pinto beans
  • ¼ cup Mexican mix cheese (or queso fresco)
  • 3-4 eggs
  • aluminum tin
  • aluminum foil
  • pico de gallo, sour cream, and cilantro, for garnish

Instructions:

  1. Pour a thin layer of the chili verde salsa into the tin, covering the base.
  2. Layer in chips, cheese, pinto beans, and more salsa. Top with a final layer of chips and cheese.

  4. Place on the grill for 25-30 minutes, depending on the temperature of your fire. You can always lift the foil to take a peek.
  5. Garnish with a dollop of cilantro, pico de gallo, and cilantro.

Add a final layer of chips, cheese, and a very light sprinkle of salsa. Crack a couple of eggs on top, cover the tin, and you'll be cooking in no time.

Leave it on the grill for 25-30 minutes, or until the eggs are cooked. The timing will totally depend on how hot your grill gets. It will also differ if you're going old fashioned and cooking directly over the campfire. Just make sure you're careful when checking on the status; the tin can get very hot.

Dinner: Jambalaya Skewers and Spanish-Style Rice

After a long day of hiking, swimming, and exploring, cooking a big meal is definitely the last thing on your mind. Take the load off the campsite prep work with these jambalaya skewers. Much of the prep can be done at home ahead of time, leaving more time for stargazing and ghost stories.

Ingredients:

  • 12 pre-cooked shrimps
  • 2 andouille sausages
  • 1 of each red, green, and orange bell peppers
  • half of sweet onion
  • 1 teaspoon cajun seasoning
  • 1 cup long-grain rice
  • 1 cup chicken stock
  • 1 cup stewed tomato
  • 1 teaspoon salt
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • kebab skewers
  • aluminum tin
  • aluminum foil

Instructions:

  1. Prep your shrimp and veggies ahead of time. Mix your pre-cooked shrimp in a plastic baggie with the Cajun seasoning. Dice the pepper and put into an airtight container.
  2. Once at the campsite, cut the onion and slice the andouille sausage. Construct your kebabs and cook on the grill.
  3. Rinse the rice in the aluminum tin a couple of times. Add the minced garlic, salt, and stewed tomatoes. Stir and cover with foil.
  4. Place on the grill for 30-40 minutes, or until done. Again, this will depend on the heat from your grill or fire.
  5. Once the rice is done, serve it up!

Making rice is surprisingly easier than you would think. All you need to do is give the rice a rinse, add the garlic, salt, tomatoes, and stock, cover it, and throw it on the grill! Granted, it takes a good 30-40 minutes to cook, but you can always do this right away and make your kebabs afterwards.

Dessert: Peach Cobbler

Of course, there's the always reliable s'mores for the campfire. A guaranteed classic, in fact. But why not take your camping dessert game to the next level with a tasty, warm peach cobbler? It's so much easier and cleaner than dealing with melted chocolate and sticky fingers.

Ingredients:

  • 1 large jar of peaches, with syrup
  • 2 biscuits
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar
  • whipped cream
  • aluminum tin
  • aluminum foil

Instructions:

  1. Slice the peaches and place into aluminum tin. Add ½ of the peach syrup.
  2. Combine sugar and cinnamon. Sprinkle on top of the peaches.

  4. Add one final thin layer of peaches and top with the cinnamon mixture.
  5. Cover and cook on the grill for 10 minutes.

Crumble the biscuits on top and add another smaller layer of peaches and cinnamon sugar. Cover it and toss it on the grill for 5-10 minutes, just enough to warm it up, and serve.
