I have never heard go baking powder added to eggs. What does this do?

I think it's supposed to make the eggs fluffier. I've seen this trick in several books and magazines.

Really easy and tasty. The baking powder makes the egg pancake fluffy, like in a normal pancake. I had no dill so I used equivalent amount mint and it was delicious. My only thought I had at the end of eating mine was that the ensemble could have had a touch more acid to make it pop. Perhaps dressing the salad with a bit of lemon juice? Or a garnish of some quick pickled carrots or onion?

I find the whole wheat Toufayan pita to be the best. Available in most supermarkets.

It's flexible, use a total of three cups of chopped herbs of your choice. I love dill, so most of what I put in was that.

I'm going to use the naan bread I can buy at Costco. Not authentic, but doing the job. If you have the time, make your own pita bread. Not hard, just time consuming. If you want pita bread, look for a good recipe online - there are many.

I wish this had a bit more flavor. Each component is nice, they work well together, but the sum total didn't pack the flavor punch that I had hoped for, especially given the sheer amount of herbs in the omelette. Maybe adding a few spicy pickled vegetables to the final sandwich would help, or perhaps some additional herbs or seasonings in the salad portion would help?

The herb omelet is delicious! I used green onions, fresh mint, parsley, cilantro, a clove of garlic and the baking soda. Delicious!

This is one of my favorite recipes. My boyfriend snd i make it at least a couple times a month when we’re craving something Mediterranean but don’t want to order out. Can’t recommend enough! The baking powder is a must—it helps the egg puff up into a fluffy delicious pancake.

Made for a second time, halved the yogurt/tahini dip per notes that it made too much and wished we had more! Even after heavy salt- and harissa-ing of the salad and some light lemon-ing agree with folks wanting there to be a stronger pickle/vinegar/sharpness somewhere. Good enough to keep experimenting.Used a ninja-chop to do the herbs and even just tossed the eggs in there for mixing. It's the best.

For those wanting a bit more acid - you could go down the kuku sabzi route and add some barberries to the egg mix.

I enjoy Lebanese cuisine, and Mediterranean foods in general. As a vegetarian I was happy to see this recipe. However, I thought the final taste was average and the prep time was excessive. As others have commented, I found it took particularly a lot of time to prepare the herbs and I found there was far too much yogurt/tahini sauce. It took my partner and I over 60 minutes to prepare this meal, and we both rated the outcome as just "fine".

I made this tonight for the first time. I have these issues:The prep time, especially for the herbs is excessive.The ratio of herbs to egg is greater than my taste prefers. If I make this again I’ll halve the amount of herbs. I might even use some of those handy already chopped and dried herbs from a little plastic container.I agree with the idea of some lemon and oil in the salad.I think this might be better served on a bed of couscous instead of the pita bread.

I found this took about 45 minutes from start to serve, so it didn't seem overly long for a weekday evening. I think the addition of lemon/white wine vinegar in the chopped veggies is a good call and you can't go wrong with couscous, though it was great tucked into whole wheat pitas. A messy delicious dinner

Very fresh tasting, eggs were light and fluffy, salad was excellent. I seeded the cucumber and tomato to reduce the chance of the salad making the bread soggy. It turned out to be quite a manageable sandwich. No sogginess or falling apart. Good for a build you own buffet.

I used some spinach in the recipe instead of as much herbs and it worked well. This is very similar to a Spanish tortilla! It's easy, delicious, healthy, and great for any meal of the day.

The omelet itself is a Persian recipe. I add goji berries and chopped walnuts in the middle when it's cooking.

I've found it difficult to locate fresh pita, and it is too difficult to bake it myself. Most bakeries do not carry it, and the pita sold in supermarkets is halfway between fresh and stale.It is very difficult to produce a great meal when the bread is subpar.
